Mexican Madness

My ward is trying to put together a farmers market co-op where we buy in bulk for discounts and then split the goods 12 ways. Yesterday was a trial run. We will hopefully eat everything that came back before it goes bad, but we ended up with more of some things than I usually buy at once.

I told Matt we'd probably have Mexican food more than normal this week since we have a lot of onions, avocados and lettuce.

His response: "So we're going to have it every night instead of every other night? I mean, I'm not complaining, I like it. I'm just saying."


HAHAHA. Touché!

So Mexican food is my fall back. It's true. We probably eat some form of Mexican food 2-3 times a week regularly. Don't let my "loose menu" fool you. If one of my meals falls through, it's a Mexican dish that takes its place. What's your fall back?

that is such a great story. my fall back food is pasta. It's fast, the sauce is easy and we all have the basic seasonings. AND it's rare that someone dislikes pasta... but the same is true for mexican! I'm curious to hear how the ward market goes. how often will it be held?

Right now we're planning every other week. A friend and I are actually going to try and share one spot since are families are small.

I used to fall back on pasta, and sometimes I still do, since it's usually very easy (and cheap). But my favorite fall back is leftovers. And if there are no leftovers, I usually open a can of Campbell's soup and make sandwiches to go with it. EASY is the key for fall back food in my kitchen. We used to eat a ton of Mexican food (Blake's dad is a Texan, so most of the recipes I collected from his mother are Mexican in nature), but since moving to NYC, I'd had a very hard time finding the necessary ingredients for even remotely affordable prices. So a lot of old favorites are slowing disappearing from our regular repertoire. Sad. I like Mexican.

We're big Mexican food fans over here too, pasta is also an easy fall back. And as a last resort...cereal. :)

Lindsay, that's too bad. It's funny how regional things are. I remember a lady from NY was SHOCKED to find out that fresh dill wasn't carried year round in UT. It was such a staple in her cooking she couldn't imagine life without it.

Laura, Matt would rather not eat dinner than eat cereal for dinner. Funny, hu?

And Sarah, I never would have guessed! ;0) Soft tacos are most done and then we have: bean and rice burritos, nachos, tostadas, "cafe rio" salads, tamales, taquitos, flautas, stuffed quesadillas, fajitas, etc.

Pasta is one of the least eaten things at our house. Since I've been meal planning I've tried to incorporate it more, but it's just not something I crave.

Pasta is ALWAYS the fall back in this house...and cereal. Laura, I'm glad I'm not the only one that on occasion, has marshmallow mateys for dinner!

Same here in the Thteed house--we LOVE mexican style food!
Bean burritos are always on standby.

ok, mine is pancakes, eggs, and hashbrowns. always have the stuff to make it and who doesn't like breakfast for dinner-except maybe matt!

You're right Becki. He's not a big fan. He'll eat it, but he'd NEVER request it.

My fallbacks are definitely spaghetti and tacos. I wish I could branch out, but all of my kids like both (or will at least eat the taco meat), and ground beef is something you just don't have to plan ahead to prepare or cook.

So funny you ask! Since you've posted it, Millionaire Chicken has been my fallback when I'm feeling lazy. I do the meat in the crockpot so it's so easy and quick.

But if I don't have green onions on hand I know that chicken, ground beef, tortillas, black beans, onion and cream of mushroom soup will ALWAYS be in my fridge and pantry. So dinner will usually be fajitas or stroganoff.

We fall back on good'ol spagetti! We do a fruit and veggie co-op here in Queen Creek too! I love it...we pick up our food every other saturday. We get a full laundry basket full of food for 15 bucks! I love it! And it makes me cook lot more healthy stuff!

Yeah, we got a laundry basket of food for $15 too. Not a bad set up so long as you can/will use everything others buy/choose.

I'm right there with everyone on the whole pasta thing!! The co-op thing sounds genius though. . .can't wait to hear the follow-ups!

Funny, I was just looking into joining a food co-op next week. I'm kind of excited about it. My fall back dinner is tacos. Can't go wrong!
