Well, I posted the results and recipes of my totally homemade spinach lasagna on my cooking blog if anyone was interested in seeing. I was quite pleased with the results.
whoa. amazing. i got tired just reading the recipe, so i guess i won't be trying it anytime soon. grandma, julie, and i were talking today, and we all agreed that you are amazing.
I did it in stages to keep it manageable. I did the pasta first, the ragu the next day and the bechamel/ assembling it all on the third day. Definitely not your "weeknight" pasta. However, if you used store pasta and made a double batch of the Ragu, you could freeze the sauce and make a lasagna pretty easily later on. The bechamel was super quick and easy (and yummy).
